If you’re cooking souvlaki the right way, you need to do it over coals on the spit. But sometimes you don’t have time or patience to get the fire started with kindling or paper because - as Jim says “fire starters are for wimps”. Instead, he invented a coal-starting shortcut that's sure to start things off with a bang. You can get your coals from Oakleigh, Bakaloumes, or just from Bunnings. For higher quality coals, look for Mallee Root Lump Charcoal.

For a spit, Jim uses his Cypriot spit souvlaki motors. Passed down from his Dad, they’ve been running for 40 years with repairs to keep them going. But you can just buy yours from a BBQ store.
