If you’re cooking souvlaki the right way, you need to do it over coals on the spit. But sometimes you don’t have time or patience to get the fire started with kindling or paper because, as Jim says “fire starters are for wimps” . Instead, he invented a coal- starting shortcut that's sure to start things off with a bang. You can get your coals from Oakleigh, Bakaloumes, or just from Bunnings. For higher quality coals, look for Mallee Root Lump Charcoal. For a spit, Jim uses his Cypriot spit souvlaki motors. Passed down from his Dad, they’ve been running for 40 years with repairs to keep them going. But you can just buy yours from a BBQ store.

  • Bag of coals
  • 5-6 pieces kindling
  • ¼ bottle of methylated spirits
  • Bravery

Method

  1. Fill the spit with your coals in a peak formation
  2. Slowly pour methylated spirits over the coals, letting the methylated spirits seep through the coals
  3. Put 5-6 pieces of kindling on top of the coals
  4. Roll up a bit of paper and light it on fire. Quickly throw it on top of the coals, being careful to stand back as not to lose your eyebrows
  5. Once the coals turn white after about 30 minutes, they are ready to spread evenly and begin coooking
