Marinated Capsicum
Μαριναρισμένη Πιπεριά
Made up of only a short list of ingredients which you most likely have in your cupboard at any given time, Marinated Capsicum is a convenient and easy side dish. Filled with flavour and able to be kept for a few weeks, this dish is something that you can put together for occasions big and small.

- 5 capsicums
- 1 tablespoon olive oil, for rubbing
- 2 tablespoons canola oil, for dressing
- Juice of 1 lemon
- 2 tablespoons balsamic vinegar
- 2 cloves garlic, finely diced
- 1 tablespoon dried oregano
Method
- Cut capsicum into quarters and rub the outside of the capsicum skin with vegetable or olive oil
- Using metal tongs, carefully grill the capsicum quarters over a flame (you can gas stove top, or under the grill) until the skin is burnt. Remove from the flame and seal the capsicum in an airtight container until it cools. This should make it easier to peel the skin off
- While the capsicum is cooling, make the dressing by stirring together olive oil, salt, lemon juice, balsamic vinegar, garlic and dried oregano in a bowl. If you want to keep your Marinate Capsicum in the fridge, use canola oil. If you're eating it the same day, use olive oil instead.
- Once cooled, peel the skin off the capsicum quarters and place the skinless capsicum quarters in a large bowl. Add the dressing and mix well to combine
- Serve to eat or store in an airtight container.
