Soula's Fried Rice

Soula’s fried rice is a guaranteed crowd-pleaser, making an appearance at every family event without fail. The liquid from the canned corn is an ingredient she swears by to add extra flavour. Sometimes she skips the bacon and ham for a vegetarian version, proving her fried rice is as versatile as it is delicious. With so many versions over the years,even Soula can’t keep track of all of the variations, but this recipe is the one she depends on most.

Ingredients

- 1 tablespoon sesame oil or olive oil
- 1 brown onion, diced
- 3 rashers bacon, cut into 2cm squares
- 3 slices ham, cut into 2cm squares
- 1 red and 1 green capsicum, diced
- 6 mushrooms, thinly sliced
- 1 cup frozen peas
- 1 spring onion, thinly sliced
- 1 can corn kernels (420g)
- 3 tablespoons soy sauce
- 1 tablespoon vegetarian stir fry sauce
- 2 eggs
- 1 cup Basmati rice
- 2 cups water
Method
- In a lightly oiled pan, fry the onion until translucent. Add in the bacon and ham and cook until lightly browned
- Add in the capsicum and stir, cooking for 2 minutes
- Once the capsicum has browned, add in mushroom, peas and spring onion and cook for 5 minutes
- Add in the whole can of corn kernels, including the brine, soy sauce, and vegetarian stir fry sauce. Incorporate well and let it cook for a further 5 minutes
- Scramble the eggs in a small bowl, and pour them into an empty spot in the pan by pushing everything to one side. Keep stirring the eggs until they’re fully cooked then fold into the meat and veggies. Cook for a further 5 minutes, then let it sit for an hour
- In the meantime, prepare your rice how you normally would. Soula washes her rice in water until it runs clear, and cooks it in the microwave. She uses 1 cup of rice to 2 cups of water ratio, but you can use your usual method
- After your rice has cooked, ensure you let it cool entirely as it must be cold before you incorporate it with the rest of your veggies and meat. Soula often cooks the rice the night before
- Add your cold rice to your mixture and mix well. You can add in more soy sauce or vegetarian stir fry sauce where needed
