Garlic butter flathead
Ask anyone within a 100km radius of Port Phillip Bay about Jim Demetriou and they will tell you their own tale about his fishing feats. Self described as a “once-in-a-generation fisherman” , he will often return home with coveted catches and promptly cook this Garlic Butter Flathead recipe. With just fish, flour, butter, and a few spices, this is a foolproof way to almost cook your fish as good as Jim.

Ingredients
- ½ cup of flour
- 1 teaspoon turmeric
- ½ teaspoon salt
- ½ teaspoon pepper
- 8 fillets of flathead, deboned
- 100g butter
- 1 clove garlic, finely diced
Method
- Make the flour seasoning in a plastic bag mixing flour, turmeric, salt and pepper
- Place the flathead in the bag and shake until coated
- In a large frying pan, heat up half of the butter over a high heat, ensuring there’s enough butter to cover the base of the pan. Just before the butter starts to bubble, add the fish fillets in and turn the heat down to medium
- Once it's browned nicely on one side, flip the fillets and add the remaining butter and garlic. Cook until the fish fillets are browned and cooked through on both sides.
- Remove the fish fillets and continue to cook the garlic and butter until the garlic turns translucent. Make sure you don't burn the garlic
- Place the fillets on a serving plate and pour the leftover garlic butter on top to soak into the fish
