Ingredients
- 500 grams sesame seeds
- 500 grams honey
- 100g pistachios
Method
- Toast sesame seeds over medium high heat for approximately 5 minutes. Add the pistachios and continue toasting for another 5 minutes or until the sesame has started to turn golden in colour
- Remove the sesame seeds and pistachios from the pan and set aside
- In the same pan (that you’ve allowed to cool slightly) pour in the honey and bring it to a boil over medium high heat. As soon as the honey starts to boil and bubble, carefully pour the toasted sesame and pistachio back in
- Stir constantly for up to 10 minutes for soft and sticky texture, or continue cooking for another 10 minutes for a harder and crunchy result
- Line a 25x20cm tray with baking paper and transfer the sesame honey mix evenly
- Top with another sheet of baking paper and use the back of a large spoon or small rolling pin to gently press down and compact everything together
- Allow to cool completely
- Cut into bars or diamond shapes. If you’re saving them for later, separate each one with baking paper so they don't stick together and store in an airtight container
